Raw Ginger Scallion Oil

This bright and savory condiment can be eaten with Hainan Chicken, dumplings, noodles or anywhere you can't taste just one bite!!

Ingredients

  • 4 TBSP finely chopped green onions use both the white and green parts, about 2 lg. scallions, ~75g
  • 3 TBSP finely chopped fresh ginger use 10 thin quarter slices, ~ 25g
  • 1/3 cup vegetable or canola oil ~90-120ml
  • ½ tsp salt or to your liking

Instructions

  • Wash the green onions and dry completely. Thinly slice them along the lengths of the green so that you can have very finely sliced pieces. Then, cut across so that you have very finely minced scallions.
  • Slice 10 very thin quarter sized slices from your ginger. Julienne them into matchsticks and then turn them and cut them very finely. You can also do this with a food processor.
  • Mix up the scallions, ginger, oil and salt in a bowl, or a used jam jar. ( Bonne Maman jam jars with the checkerboard screw on lid are the perfect size)
  • Shake it up again just before you're ready to serve.
